Two workers in the Mennonite Christian Hospital kitchen prepare trays of identical meals for patients. A very large pot sits on a chair in the foreground. Hualien, Taiwan. 1965 label: “Our Hospital Kitchen: In our kitchen we prepare meals for all the patients. Recently we have reorganized somewhat and have a special diet kitchen that is separate. The foods received from MCC are used for all diets but especially in making up the special diets of various kinds.”

Russian Mennonite Borscht

"Russian Mennonite Borscht (from the oral tradition): Simmer about 4 lbs. beef, mutton, or pork, with lots of bone until almost done, salt to taste, of course. Add a head of cabbage and about 4 onions, all medium sliced or chopped, three long stems dill, and a small handful of parsley. When done, add about twelve or so juicy ripe tomatoes and keep simmering until these are done. Served with sweet or sour cream: Umm-hmm!"

Women gathered outdoors with supplies

Community members gathered outdoors with food supplies brought for a barn raising. Corresponding section of the Brubacher House script reads: "Although work begins at 8:00 a.m. most helpers have done a lot of chores at home before they arrive. They bring enough food with them to feed all the workers."
